Watermelon Cake
Surprise your guests when you cut into this fruit cake

What do I need?
- 6 – 7 kg whole watermelon
- 600ml double cream
- 60ml cup thickened cream
- 80g icing sugar
- 2 teaspoons vanilla essence
- Berries – raspberries, blueberries, strawberries to serve
How do I make it?
- Cut the top and bottom off the watermelon and reserve the pieces you have cut off. Stand the watermelon upright on a chopping board and carefully cut around the watermelon to remove the rind and make a cylinder shape.
- Place the watermelon cylinder on a wire rack over a baking tray or similar and leave it to allow excess juices to drain. Pat the outside of the watermelon with paper towel to dry as much as possible so that your cream will stick.
- Beat the two creams, icing sugar and vanilla until peaks start to form. Place watermelon on serving plate and cover completely with the cream mixture. Refrigerate for 10 minutes and then decorate with berries of your choice to serve.
