Lemon Chia Pancakes with Citrus Glaze
These light and fluffy pancakes are infused with lemon zest and the subtle crunch of chia seeds. Drizzled with a tangy citrus glaze they are perfect for brunch or as a dessert.

What do I need?
For the Pancakes
- 2 cups plain flour
- 2 tsp baking powder
- ½ tsp bicarbonate of soda
- 1 tbsp sugar
- ½ tsp salt
- ½ cup vanilla yoghurt
- 1 ½ - 2 cups milk
- 1 egg
- 3 tbsp salted butter, melted plus extra for greasing
- 1 tbsp chia seeds
- Zest of 2 lemons
For the Citrus Glaze
- 2 cups icing sugar
- 3-4 tbsp freshly squeezed lemon juice
How do I make it?
- Sift flour, baking powder, bicarb, sugar, and salt together in a large bowl.
- In a separate bowl combine yoghurt, milk, egg, and melted butter.
- Pour wet ingredients into the dry ingredients and mix until just combined. Add chia seeds and lemon zest and fold through mixture.
- Heat a non-stick frying pan over medium heat. Add butter to the pan and then spoon in some of the pancake batter. Cook until bubbles form on the surface, then flip and cook the other side.
- Make the Citrus Glaze by combining icing sugar and lemon juice in a bowl.
- Serve pancakes drizzled with Glaze.
