Melon Ice Cream
Take advantage of this week’s Extra Thrifty specials on rockmelon and honeydew by making this yummy ice cream. Creamy and delicious, it’s the perfect accompaniment to fresh fruit.

What do I need?
- 500 g rockmelon, roughly chopped
- 500 g honeydew, roughly chopped
- 6 egg yolks
- 1 cup sugar
- 2 cups thickened cream
- 2 tsp vanilla extract
How do I make it?
- Add rockmelon and honeydew to a food processor and blitz until smooth.
- Using an electric mixer mix eggs, sugar, and vanilla until thick and creamy.
- In a separate bowl, whip cream until stiff peaks form. Fold the cream through the egg mixture, then add the melon puree and mix to combine.
- Transfer mixture to a lidded container and place in the freezer. Freeze for at least 4 hours or overnight.
- Serve with fresh melon.
