Crunchy Caramel Nut Popcorn
This caramel flavoured popcorn is the perfect snack for movie nights at home. It will remain fresh for 2+ weeks in an airtight container.

What do I need?
- 10 cups popped popcorn
- 100 g butter, roughly chopped
- 220 g brown sugar
- ½ cup liquid glucose
- Pinch of salt
- 1 tsp vanilla extract
- ½ tsp bicarbonate of soda
- 1 cup unsalted peanuts
How do I make it?
- Preheat oven to 110C.
- Spread popcorn onto 2 baking trays lined with baking paper. Set aside.
- Melt butter in a saucepan over medium heat then add brown sugar, glucose, and a pinch of salt. Stir, then leave without stirring until the mixture starts to bubble. Allow to simmer for 5 minutes, then remove from heat and add vanilla and bicarbonate of soda and whisk well. Add peanuts and stir to combine.
- Pour caramel mixture over the popcorn and bake in oven for 1 hour, tossing every 15 minutes.
- Remove from oven and set aside to cool. When cooled, break into pieces, and serve.
