Plum Crumble Slice
Full of fresh, juicy plums this slice is fabulous for afternoon tea, added to lunchboxes, or enjoyed for dessert with a scoop of vanilla ice cream or some custard.

What do I need?
- 125 g unsalted butter, chopped
- ½ cup caster sugar
- 2 free-range eggs
- 2 cups self-raising flour, sifted
- 300 mL sour cream
- 12 plums, sliced
- 1/3 cup plain flour
- ½ cup brown sugar
- ½ tsp ground cinnamon
- 25 g unsalted butter
- 1 cup slivered almonds
How do I make it?
- Preheat oven to 175C.
- Grease and line a 18 centimetre x 28 centimetre slice tin.
- Using an electric mixer, beat butter and caster sugar together until light and creamy. Add eggs and beat well to incorporate. Add 1 cup of self-raising flour and fold into butter mixture with a spatula. Stir in sour cream and remaining self-raising flour.
- Spoon mixture into the prepared tin and top with plum slices.
- In a small bowl combine plain flour with brown sugar and cinnamon. Use your fingers to rub butter into the mixture until it resembles breadcrumbs. Add almonds and mix to combine.
- Crumble mixture over the plums and then cook in oven for 45 minutes or until cooked.
