Valhalla Low Sugar Wafflewiches
The newest kid on the ice cream block is Valhalla Low Sugar Ice Cream. Available in Vanilla Bean and Chocolate flavours it is lower in sugar than regular ice cream, but with the same great taste. Obviously we just had to use this delicious new ice cream in a recipe and so we’ve created the Wafflewich, an ice cream sandwich made with waffles. We’ve followed Valhalla’s lead and made the waffles low-sugar so you can enjoy a fabulous treat without worrying about lots of sugar.

What do I need?
For the Waffles
- ¾ cup plain flour
- ¼ cup cornflour
- 1 tsp cocoa powder
- ½ tsp baking powder
- ¼ tsp bicarbonate of soda
- 1 tbsp sugar
- ½ tsp salt
- 1 cup milk
- 1/3 cup vegetable oil
- 1 egg
- 1 tsp vanilla extract
To Serve
- Valhalla Low Sugar Vanilla Bean Ice Cream
How do I make it?
- Preheat oven to 90C.
- Whisk flour, cornflour, cocoa powder, baking powder, bicarb, sugar and salt together in a bowl.
- In a large jug combine milk, oil, egg and vanilla and whisk.
- Pour milk mixture into flour mixture and whisk to combine.
- Heat waffle iron. Pour some batter onto waffle iron and cook until the waffle is crisp. Put cooked waffles in preheated oven to keep warm while you cook the remainder. Repeat with remaining batter.
- To serve, place a generous dollop of Valhalla Low Sugar Ice Cream on one waffle and top with a second waffle. Serve immediately.
