Chia and Coconut Cups
Creamy, light and fruity, these cups make a fabulous breakfast or a lovely healthy dessert. The combination of fruit and coconut provides a lovely natural sweetness but if you want a little extra drizzle with honey or maple syrup.

What do I need?
- ½ cup shredded coconut
- ½ cup chia seeds
- 1 ½ cups coconut milk
- 1 cup coconut water
- 2 tsp vanilla extract
- ½ tsp salt
- 1/3 cup strawberries
- 1/3 cup raspberries
- 1/3 cup blueberries
- ½ cup granola
How do I make it?
- In a bowl add coconut, chia seeds, coconut milk, coconut water, vanilla and salt. Stir until well combined.
- Place in fridge for at least 3 hours, ideally overnight.
- To serve, divide mixture among 4 glasses and top with berries and granola.
