Honey Nut Baked Apples

What do I need?
- 4 Granny Smith apples*
- ½ tbsp lemon juice
- ½ cup unsalted cashews, roughly chopped
- ½ cup walnuts, roughly chopped
- 4 tbsp ricotta cheese
- ¼ cup honey
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
*If you don’t have Granny Smith apples, you can substitute with other varieties of apple.
How do I make it?
- Preheat oven to 200C.
- Cut tops off apples and hollow out the middle, removing the core. Brush the apples with lemon juice and place them in the oven on a lined baking tray for 30 minutes. Remove from oven and set aside to cool slightly.
- Meanwhile, add cashews and walnuts to a frying pan and toast over medium heat, stirring constantly until they are lightly toasted.
- In a small bowl combine ricotta, honey, cinnamon and nutmeg.
- To serve, place apples onto plates and spoon ricotta mixture into the cavity of each apple, then sprinkle with toasted nuts.
