4 Granny Smith apples*
½ tbsp lemon juice
½ cup unsalted cashews, roughly chopped
½ cup walnuts, roughly chopped
4 tbsp ricotta cheese
¼ cup honey
½ tsp ground cinnamon
¼ tsp ground nutmeg
*If you don’t have Granny Smith apples, you can substitute with other varieties of apple.
How do I make it?
Preheat oven to 200C.
Cut tops off apples and hollow out the middle, removing the core. Brush the apples with lemon juice and place them in the oven on a lined baking tray for 30 minutes. Remove from oven and set aside to cool slightly.
Meanwhile, add cashews and walnuts to a frying pan and toast over medium heat, stirring constantly until they are lightly toasted.
In a small bowl combine ricotta, honey, cinnamon and nutmeg.
To serve, place apples onto plates and spoon ricotta mixture into the cavity of each apple, then sprinkle with toasted nuts.
