Blood Orange and Yoghurt Loaf Cake
Blood oranges are a fab ingredient and we love cooking with them when they are in season. Apart from their flavour, they also look great and their juice creates a gorgeous natural pink colour that looks amazing when made into an icing and drizzled over this cake. The cake itself is delicious, it’s citrusy and tangy and the perfect thing to bake and enjoy today.

What do I need?
- 1 ½ cups plain flour
- 2 tsp baking powder
- ¼ tsp salt
- 1 cup Greek yoghurt
- ¾ cup caster sugar
- 3 eggs
- Zest of 2 blood oranges
- ¼ cup blood orange juice
- 1 tsp vanilla extract
- ½ cup coconut oil, melted
- For the Icing
- Zest of 1 blood orange
- 1 ½ cups icing sugar
- 2 tbsp blood orange juice
How do I make it?
- Preheat oven to 180C.
- Grease a 900 gram loaf tin.
- Add flour, baking powder and salt to bowl of an electric blender.
- In a bowl, mix yoghurt and sugar together and then add to the flour mixture and blend to combine. Add eggs, orange zest and juice and vanilla and mix until combined.
- Add coconut oil and fold through the mixture using a spatula.
- Pour mixture into prepared loaf tin and bake for 50 minutes or until a skewer inserted comes out clean.
- Allow cake to cool completely and remove from loaf tin.
- Make icing by mixing all icing ingredients together.
- When cake is cool, pour icing over the top and leave to set before serving.
