Apple Fritters
These fruity fritters are so simple to make that you’ll have them on the table in under 15 minutes. Serve them with ice cream and a drizzle of golden syrup or honey.

What do I need?
- 1 cup self-raising flour
- ¼ tsp bicarbonate of soda
- 1 cup soda water, chilled
- ½ cup granulated sugar
- Pinch of cinnamon
- 2 large apples
- Vegetable oil for shallow frying
How do I make it?
- Sift flour and bicarbonate of soda together into a bowl. Add soda water gradually, whisking to make a smooth batter.
- Peel apples, remove core and cut the apples into thick rounds.
- Place sugar and cinnamon in a shallow bowl and mix to combine.
- Heat vegetable oil in a large frying pan over medium-high heat.
- Place apple slices in batter, one at a time, and remove allowing excess batter to drain off the apple. Add apples to oil and cook in batches for approximately 2 minutes, then flip and cook for a further 1 to 2 minutes or until the fritter is golden.
- Remove fritters from oil with a slotted spoon and place on paper towel to drain for a minute and then dunk into the sugar. Toss fritters in the cinnamon and sugar to coat well and then transfer to a plate ready to serve. Repeat process for remaining apple.
- Serve warm with a scoop of vanilla ice cream and a drizzle of golden syrup or honey.
