Tasmanian Blueberry Ice Cream

What do I need?
- 4 cups fresh Tasmanian blueberries
- 2 cups caster sugar
- 2 ½ cups thickened cream, chilled
- 395 g sweetened condensed milk
- 1 tbsp vanilla extract
How do I make it?
- Add blueberries to a blender and puree.
- Place puree in a saucepan with caster sugar and heat, stirring frequently, over medium-low heat until sugar dissolves.
- Remove mixture from heat and refrigerate until completely cooled.
- Whip cream to stiff peaks stage using an electric mixer.
- In a separate bowl combine condensed milk and vanilla extract, then fold into the whipped cream. Add chilled blueberry puree and gently fold through.
- Pour mixture into a freezer-safe bowl, cover the top with a piece of baking paper, and freeze overnight.
