Berry Ice Cream Popsicles
Summer is getting so close we can almost taste it. Fresh berries are coming to the fore and that means it’s the perfect time to create these fabulous popsicles. We used blueberries but you can substitute them for strawberries, raspberries or really any berry that you like.

15 minutes, plus setting time
What’s the serving size?
Makes 6-8 popsicles
What do I need?
- 2 cups blueberries (or berries of your choice)
- 2 tbsp honey
- 2 cups vanilla yoghurt
How do I make it?
- Blitz blueberries in a food processor on high speed until they are partially liquified but still have some chunks.
- Add honey and stir well to combine.
- Add yoghurt and gently mix. Taste mix and add extra honey if you would like the popsicles to be sweeter.
- Pour mixture into popsicle moulds. Freeze for 2 hours, then put a wooden popsicle stick in the middle. Return to freezer and freeze overnight.
- When ready to serve run popsicle moulds under warm water to make them easy to remove.
