Rhubarb Crumble
A classic family favourite, this easy recipe takes advantage of fresh, seasonal rhubarb. Serve with custard, cream, or ice cream for a delicious dessert.

What do I need?
- 500 g rhubarb, washed and cut into 2-3 centimetre batons
- 100 g caster sugar
- For the Crumble
- 140 g self raising flour
- 85 g chilled unsalted butter
- 50 g brown sugar
How do I make it?
- Preheat oven to 200C.
- Add rhubarb to an ovenproof dish and pour over caster sugar, tossing to coat. Cover with foil and roast for 10 minutes.
- Meanwhile make the crumble by rubbing self-raising flour and butter together with your fingers until soft and crumbly. Add brown sugar and mix.
- Scatter crumble over the cooked rhubarb and bake for 25-30 minutes, or until golden on top. Serve immediately with custard, cream, or ice cream.
