Coconut cream, white chocolate and kiwi fruit tartlets
Oh my! These little tartlets are just divine and the perfect thing for a Sunday afternoon tea.

What do I need?
- 240g Gingernut or Butternut Snap biscuits
- 200g unsalted butter
- 125ml coconut milk
- 250g white chocolate, chopped
- Kiwi fruit, thinly sliced, to serve
- Dessicated coconut, to serve
How do I make it?
- Grease eight 10cm loose-bottomed tart pans.
- Blend biscuits in a food processor until the texture is a fine crumb.
- Melt 100g of the butter, then add to the biscuits and process to combine. Press into the base and sides of the tart pans.
- Put the remaining 100g butter with the coconut milk in a saucepan and bring to the boil, then remove from the heat.
- Add white chocolate and stir until smooth. Pour into tart shells and chill for 2 hours or until set.
- Serve topped with kiwi fruit slices and shaved coconut.
