What do I need?
For the chocolate orange cream
- 200ml cream
- 200g milk chocolate, roughly chopped
- 1 orange, zested
For the biscuits
- 200g unsalted butter, softened
- 200g brown sugar
- 125g caster sugar
- 2 eggs, lightly beaten
- 1 tsp vanilla extract
- 400g plain flour, sifted
- 1 tsp bicarbonate of soda
- 1 tsp baking powder
- Pinch of salt
- 200g dark chocolate, chopped
How do I make it?
- Preheat oven to 190C.
- Place cream in a small saucepan and bring to the boil. Reduce heat to low and add chocolate and stir until it has melted and the mixture is shiny. Remove from the heat and stir through the orange zest. Pour into a bowl and refrigerate until the cream is set (approximately 2 hours). The consistency should be set but still spreadable.
- Using an electric blender beat butter and sugar until light and fluffy. Add eggs gradually, whisking as they are added. Add vanilla and blend to combine. Add flour, bicarb, baking powder and salt and mix until the mixture comes together into a dough.
- Add chopped chocolate, folding it well to incorporate the chocolate pieces through the biscuit dough.
- Use a teaspoon to scoop out pieces of the dough and roll them into balls. Place balls on lined baking trays, leaving plenty of room for the biscuits to spread during cooking. Bake in batches for 10 -15 minutes or until golden. Remove from oven and set aside to cool.
- When the biscuits have completely cooled, spread half the batch with the chocolate orange cream and sandwich together with the remaining biscuits.
