Mango Coconut Ladoo
These fudgy mango coconut balls have just three ingredients and are very easy to make. They are a wonderful sweet treat, ideal for lunch boxes or for a simple dessert.

What do I need?
- 2 ripe mangoes
- 1 ½ cups desiccated coconut, divided
- ½ cup sweetened condensed milk
How do I make it?
- Peel mangoes, remove seed and roughly chop. Add to a blender with 3 tbsp water and blitz until smooth.
- Heat a non-stick frying pan over low heat. Add 1 cup of coconut to the pan and toast, stirring constantly until it is fragrant – the coconut should not turn brown.
- Add pureed mango and stir to combine. Add condensed milk and continue stirring until the mixture comes together into a fudgy consistency, about 5 minutes.
- Remove from heat and set aside to cool slightly.
- When cool enough to handle, pinch a small amount of the mixture out and roll with your hands into a ball. Roll the ball in remaining coconut. Repeat until all mixture is used and store ladoos in the fridge.
