Ultimate chocolate fudge cake

What do I need?
- 250g self raising flour
- 50g cocoa powder
- 250g dark chocolate
- 250g brown sugar
- 250g unsalted butter, softened
- 100ml water
- 4 large eggs
- 1 tsp vanilla extract
For the frosting
- 200g icing sugar, sifted
- 200g unsalted butter, softened
- 200g dark chocolate, melted
For decoration
- 50g dark chocolate
How do I make it?
- Preheat oven to 180C.
- Grease and line two 20 centimetre spring form cake tins with baking paper.
- Add flour and cocoa to a bowl. In a saucepan, melt chocolate with sugar, butter and water and leave to cool.
- When cooled transfer to a mixing bowl and whisk in eggs one by one until combined, then add vanilla. Mix wet ingredients into dry.
- Pour batter into cake tins and bake for 30 minutes or until a skewer comes out clean. Remove cakes from oven and set aside to cool.
- Make frosting by beating icing sugar and butter until light and fluffy. Add melted chocolate and mix well. Put a layer of frosting on top of one of the cakes, then add second cake on top. Cover top and sides with frosting. Use a vegetable peeler or knife to scrape the surface of the chocolate to create curls and use these to decorate the top of the cake.
