Plum Dumplings
Common throughout Eastern Europe, Plum Dumplings – knedle sa šljivama– are a versatile dish that can be enjoyed as a savoury accompaniment to a meal, or as a dessert sprinkled with sugar as we have made.

What do I need?
- 3 medium potatoes, peeled, boiled, mashed and cooled
- 2 eggs, beaten
- Pinch of salt
- 1 ½ cups plain flour
- 16 plums, pitted
- 100 g sugar, divided
- 4 tbsp unsalted butter
- ¼ cup breadcrumbs
How do I make it?
- Place cooled mashed potatoes in a large bowl. Add eggs and salt and stir with a wooden spoon to combine. Add flour, a little at a time, stirring to combine into a soft dough.
- Put a large saucepan of water on to bring to the boil.
- Meanwhile, sprinkle a little sugar inside each of the plums where the stone was removed. Reserve 35 grams of sugar for serving.
- Lightly flour your hands, then take a portion of the dough and pat it flat in your hand. Place a plum on top of the dough and bring the sides up to enclose the plum fully. Seal edges and set aside. Repeat with the remaining plums.
- Carefully place dumplings into the boiling water and cook for 20 minutes.
- Meanwhile melt butter in a small frying pan over medium heat. Add breadcrumbs and cook until golden brown.
- Remove dumplings from the water using a slotted spoon and place in a colander to drain . Transfer to a bowl and sprinkle dumplings with breadcrumbs and reserved sugar.
