Nectarine granita with blueberries
Take advantage of the bounty of stonefruit with this fabulously refreshing dessert that's perfect for the warmer weather. Blueberries are the perfect partner to this sweet treat so sprinkle them generously on top.

What do I need?
- 800g nectarines
- 1 cup sugar
- 1 cup water
- 60 ml orange juice
- 185ml sparkling rosé, plus extra to serve
- Blueberries to serve
How do I make it?
- Start by making a sugar syrup by combining the water and sugar in a saucepan. Bring to the boil and allow to boil for one minute, then set aside to cool slightly.
- Remove the stones from the nectarines, and coarsely chop.
- Next place the nectarines, orange juice and 1 ¼ cups of the sugar syrup you have made in a food processor and blend until smooth.
- Stir in the sparkling rosé and then pour the mixture into a container and place in the freezer.
- When frozen, scrape into flakes using a fork and serve with extra rosé if desired.
