What do I need?

For the Base

  • 200 g plain sweet biscuits
  • 80 g unsalted butter, melted

For the Caramel

  • 125 g caster sugar
  • 2 tbsp water
  • 70 mL cream
  • 25 g butter

For the Cream Layer

  • 250 mL cream
  • 1 tbsp icing sugar
  • ½ tsp vanilla extract
  • 2 ripe bananas, sliced

How do I make it?

  1. Make the base by crushing the biscuits into a fine crumb using a food processor. Separate 2 tablespoons of the crushed biscuits and set aside for garnish. Stir the melted butter into the remaining biscuits and then spoon the biscuit mix into the base of 4 glasses. Push gently with the back of a spoon to form the base, then refrigerate while you prepare the remaining ingredients.
  2. Make Caramel Sauce by adding caster sugar and water to a heavy-based saucepan over medium heat. When the sugar has dissolved, increase heat and let boil until it turns a rich golden colour, then stir in cream and butter. Set aside to cool.
  3. When Caramel Sauce has cooled spoon a layer over the biscuit base in each glass. Layer sliced banana in glasses.
  4. Whip the cream with icing sugar and vanilla until soft peaks form. Spoon cream over the bananas and serve topped with reserved biscuit crumb.

TOP TIPS

  • If you’re short on time you can use a store-bought caramel sauce.
  • Refrigerating the assembled Banoffee before serving will allow the layers to set slightly and the flavours to meld. If refrigerating don’t put the biscuit crumb on top until serving.
