Stargazer with Garlicky Tomato Sauce
With their firm, meaty flesh, stargazer works well with a bold and fragrant sauce like this garlicky tomato number. Enjoy it over a bed of rice or cous cous to soak up all the delicious flavour.

What do I need?
- 3 tbsp olive oil
- 10 cloves garlic, peeled and sliced
- ½ tbsp sweet paprika
- 1 cup canned crushed tomatoes
- 1 1/2 cups water
- 150 g cherry tomatoes, halved
- Salt, to taste
- Freshly ground black pepper, to taste
- 600 g stargazer fillets
How do I make it?
- Preheat oven to 200C.
- Add 1 tbsp olive oil to a large frying pan over low heat. When the oil is warm, add garlic and cook, slowly, stirring often, until the garlic is golden, about 15 minutes. Add paprika and cook for 1 minute, then add crushed tomatoes and increase heat to medium-high. Cook for 1 minute, then add water and cherry tomatoes, and reduce heat to a simmer. Cook for 8 minutes, then season to taste. Transfer sauce to a large ovenproof casserole dish.
- Season stargazer fillets with salt and pepper and add to the dish, nestling them amongst the sauce. Cook in the oven for 15 – 20 minutes or until the fish is cooked through.
- Serve with rice or cous cous.
