500 g barramundi fillets
1 tbsp olive oil
1 brown onion, peeled and finely diced
2 cloves garlic, minced
3 potatoes, peeled and diced into 1-centimetre cubes
¼ cup water
1 red capsicum, diced
1 tomato, diced
1 tbsp thyme leaves
2 tbsp flat leaf parsley, chopped
Freshly ground black pepper
How do I make it?
Heat olive oil in a large frying pan over medium-high heat.
Add barramundi and cook for 5 minutes per side, then remove from pan and set aside in a warm place while you make the vegetable salsa.
Add onion and garlic to the frying pan, and cook, stirring frequently until the onions have softened. Toss in potatoes, reduce heat to medium, add water and cover with a lid. Cook, for 5 minutes, then add capsicum, tomato, thyme, parsley, and salt and pepper to taste. Continue cooking covered for 10 minutes, or until the potatoes are tender.
Return barramundi to the pan and heat through, then serve.
