Barramundi with Warm Vegetable Salsa

What do I need?
- 500 g barramundi fillets
- 1 tbsp olive oil
- 1 brown onion, peeled and finely diced
- 2 cloves garlic, minced
- 3 potatoes, peeled and diced into 1-centimetre cubes
- ¼ cup water
- 1 red capsicum, diced
- 1 tomato, diced
- 1 tbsp thyme leaves
- 2 tbsp flat leaf parsley, chopped
- Salt
- Freshly ground black pepper
How do I make it?
- Heat olive oil in a large frying pan over medium-high heat.
- Add barramundi and cook for 5 minutes per side, then remove from pan and set aside in a warm place while you make the vegetable salsa.
- Add onion and garlic to the frying pan, and cook, stirring frequently until the onions have softened. Toss in potatoes, reduce heat to medium, add water and cover with a lid. Cook, for 5 minutes, then add capsicum, tomato, thyme, parsley, and salt and pepper to taste. Continue cooking covered for 10 minutes, or until the potatoes are tender.
- Return barramundi to the pan and heat through, then serve.
