Smoked Trout and Green Pea Frittata
Easy to prepare, this frittata is very versatile. Enjoy it hot and freshly cooked, or refrigerate after cooking to slice and serve cold later.

What do I need?
- 500g potatoes, peeled and thickly sliced
- 200 g hot smoked trout
- 8 eggs
- 2 tbsp chopped dill
- 100 g frozen peas
- 75 g grated cheddar cheese
- Salt
- Freshly ground black pepper
- 3 tbsp olive oil
How do I make it?
- Cook potatoes in a large saucepan of salted boiling water until just tender. Drain and set aside to cool slightly.
- Add eggs to a large bowl and whisk gently. Flake in smoked trout and add dill, peas, cheese, and salt and pepper. Add potatoes to the bowl and stir to combine.
- Heat olive oil in a large non-stick frying pan over medium heat. Add egg mixture to the pan and reduce heat to low. Cook for 15 – 20 minutes, or until the frittata is set.
- Serve with a fresh green salad.
TOP TIP – You can substitute the smoked trout for smoked salmon if you prefer.
