Salmon with Mustard Crust

What do I need?
- 5 tbsp breadcrumbs
- 2 tbsp wholegrain mustard
- 1 tbsp demerara sugar
- 2 lemons, zested
- ½ tsp dry mustard powder
- 1 kg side of salmon
How do I make it?
- Preheat oven to 200C.
- Mix breadcrumbs, mustard, sugar, lemon zest and mustard powder together in a bowl. Season with salt and pepper.
- Lay salmon on a baking tray and sprinkle crumb mixture over the top. Press down with your hands to form a crust.
- Bake for 20 to 30 minutes or until the crust is golden brown and the salmon is cooked through. Serve warm or cold.
