Oysters Rockefeller
Oysters Rockefeller were first served at Antonie’s Restaurant in New Orleans. The original recipe is a very closely guarded secret but we have created our own version of this famous dish with a rich butter sauce, fresh spinach and a parmesan bread crumb.

What do I need?
- 3 dozen Cape Bruny oysters
- 1 medium onion, finely chopped
- 1/2 cup butter, cubed
- 250g fresh spinach, torn
- ½ cup grated Parmesan cheese
- ½ cup breadcrumbs
- 1 tablespoon lemon juice
- 1/8 teaspoon pepper
How do I make it?
- In a large frying pan, sauté onion in butter until tender. Add spinach; cook and stir until wilted. Remove from the heat; stir in the cheese, lemon juice and pepper.
- Top each oyster with 2 ½ teaspoons spinach mixture.
- Bake, uncovered, at 200C until oysters are plump, 6-8 minutes. Serve immediately.
