Flathead with herb crumble

Flathead, with its fabulous flavour, is always such a hit with the whole family. We’ve made it even more delicious with the addition of a herby crumble. This is a perfect mid-week meal as it is really easy to prepare and only takes 15 to 20 minutes to cook in the oven.

What do I need?

  • 600g flathead fillets
  • Salt and pepper to taste
  • 1 tbsp fresh flat-leaf parsley, finely chopped
  • ½ tsp dried marjoram
  • ¼ tsp dried rosemary
  • 1 clove garlic, minced
  • 1 ¼ cups bread crumbs
  • ¼ cup butter, melted
  • ¼ cup finely grated parmesan

How do I make it?

  1. Preheat oven to 200C.
  2. Place flathead fillets on a lined baking tray and season with salt and pepper.
  3. Combine remaining ingredients in a small bowl and then pat onto the top of the flathead fillets.
  4. Bake in oven for 15 to 20 minutes or until the fish flakes easily with a fork.
  5. Serve with salad or vegetables.
