What do I need?
2 ½ cups salmon, cooked and flaked
2 cups mashed potato
1 tbsp olive oil
2 eggs, whisked
1 clove garlic, minced
1 cup bread crumbs
2 tbsp chives, finely chopped
2 tbsp red capsicum, finely chopped
2 tbsp mayonnaise
1 tbsp flat leaf parsley, finely chopped
1 tbsp Dijon mustard
1 tbsp fresh lemon juice
2 tsp lemon zest
¼ tsp salt
¼ tsp freshly ground black pepper
2 tbsp olive oil
How do I make it?
Add all ingredients except the final 2 tablespoons of olive oil to a large bowl. Mix to combine ingredients together. Use your hands to form into patties and press them firmly so that they stay together.
Heat 2 tablespoons of olive oil in a large frying pan over medium-high heat. When the oil is hot, cook patties for about 5 minutes per side or until they are golden brown.
Serve with your choice of salad or vegetables or make a quick avocado salsa with avocado, red onion and lime juice.
