Salmon and Potato Patties
Crispy on the outside, soft and full of flavour on the inside, these croquettes are super easy to make so they’re ideal for a mid-week meal.

What do I need?
- 2 ½ cups salmon, cooked and flaked
- 2 cups mashed potato
- 1 tbsp olive oil
- 2 eggs, whisked
- 1 clove garlic, minced
- 1 cup bread crumbs
- 2 tbsp chives, finely chopped
- 2 tbsp red capsicum, finely chopped
- 2 tbsp mayonnaise
- 1 tbsp flat leaf parsley, finely chopped
- 1 tbsp Dijon mustard
- 1 tbsp fresh lemon juice
- 2 tsp lemon zest
- ¼ tsp salt
- ¼ tsp freshly ground black pepper
- 2 tbsp olive oil
How do I make it?
- Add all ingredients except the final 2 tablespoons of olive oil to a large bowl. Mix to combine ingredients together. Use your hands to form into patties and press them firmly so that they stay together.
- Heat 2 tablespoons of olive oil in a large frying pan over medium-high heat. When the oil is hot, cook patties for about 5 minutes per side or until they are golden brown.
- Serve with your choice of salad or vegetables or make a quick avocado salsa with avocado, red onion and lime juice.
