Prawn toast
Great for a snack or as finger food when entertaining, prawn toast is a staple of Chinese restaurants. It’s quick and easy to make at home too if you follow our recipe.

What do I need?
- 6 slices day-old white bread
- 500g prawns
- 2 spring onions, roughly chopped
- 2cm piece ginger, peeled, grated
- 1 eggwhite
- 1 teaspoon cornflour
- 1 teaspoon soy sauce
- 1/4 teaspoon white pepper
- 1/3 cup sesame seeds
- Peanut oil, for frying
How do I make it?
- Preheat oven to 100°C.
- Remove bread crusts. Cut each slice into 2 triangles.
- Peel and devein prawns, then pat them dry with paper towel.
- In a food processor combine prawns with spring onion, ginger, eggwhite, cornflour, soy sauce and salt and white pepper. Process until you have a smooth paste.
- Spread prawn mixture over each triangle of bread and then sprinkle with sesame seeds.
- Heat oil in a wok or frying pan. Cook prawn toasts in batches until golden. Keep warm in the oven while cooking the remaining triangles. Serve once all are cooked.
