Smoked Salmon with Avocado Salsa and Prawns

What do I need?

  • 16 cooked prawns, shelled
  • 500g smoked salmon

For the avocado salsa

  • 3 tomatoes, seeded and finely chopped
  • 2 avocados, finely chopped
  • 1 red onion, finely chopped
  • 1 tsp lemon rind, grated
  • 2 tbsp freshly squeezed lemon juice

For the dressing

  • ¼ cup olive oil
  • 1 tbsp lemon juice
  • 1 tbsp chives, finely chopped

How do I make it?

  1. Combine all dressing ingredients in a jar and shake well to combine.
  2. Chop all ingredients for the salsa and combine in a bowl. Mix gently, being careful not to crush the avocado.
  3. Place a heaped spoonful of the salsa on each plate. Top with a slice of smoked salmon and then add another heaped spoonful of salsa. Place another piece of smoked salmon on top of salsa and add two prawns.
  4. Drizzle with dressing and serve immediately.
