Squid Sambal
Easy to prepare, this spicy Malaysian-inspired Squid Sambal is wonderful served with rice and Asian greens.

What do I need?
- 500 g squid tubes
- 1 tsp tamarind paste
- 1 cup warm water
- 7 dried chillies
- 2 cups hot water
- 3 shallots
- 1 clove garlic
- 1 tsp fish sauce
- ½ cup vegetable oil
- 1 red onion, sliced
- 1 tbsp sugar
- Pinch of salt
How do I make it?
- Slice squid tubes into rings and set aside.
- Add tamarind paste to 1 cup warm water and stir. Set aside.
- Roughly chop dried chillies and soak them in hot water for 10 minutes, then drain and place in a food processor. Add shallots, garlic and fish sauce and blend until smooth.
- Heat oil in a wok or saucepan over medium-high heat. Add blended mixture and cook until fragrant.
- Add squid, tamarind water, sliced onion, sugar and salt and cook until the onion has softened, and the sauce has thickened slightly.
- Remove from heat and serve with rice and Asian greens.
