
Garlic Bread Crumbed Fish
Midweek meals don’t come any easier than this! You can use any type of fish, although firm-fleshed varieties like barramundi and gummy shark work best. Covered with a crunchy garlic bread inspired crumb, this is a dish the whole family will enjoy, and it takes less than 20 minutes to have it on the table

What do I need?
- 4 fish fillets
- 4 tbsp mayonnaise
- 2 tbsp olive oil
- Salt
- Freshly ground black pepper
- 1 cup panko breadcrumbs
- 2 tbsp Italian parsley, finely chopped
- 60 g parmesan, finely grated
- 1 ½ tsp minced garlic
How do I make it?
- Preheat oven to 220C. Line a baking tray with baking paper.
- Season both sides of fish with salt and pepper, then spread mayonnaise over the top of each fillet.
- Combine breadcrumbs, parsley, parmesan, garlic and 2 tbsp olive oil in a bowl and mix well.
- Press breadcrumb mixture onto the mayonnaise side of the fish fillets.
- Place fish on the baking tray crumb-side-up and cook for 10-12 minutes (depending on the thickness of the fillets), then place under the grill on high heat for a further 2-3 minutes, or until the crumb is golden and the fish is cooked through.
