Festive flavours are front and centre in this infused vodka. It needs time for the flavours to develop so start making it at least a week before you intend to gift it. Best served chilled, either from the fridge or over ice.

20 minutes, plus 3 days to infuse

Makes approximately 700 mL
What do I need?
300 g mixed dried fruit
100 g mixed dried peel
5-centimetre piece of ginger, peeled and finely chopped
75 g caster sugar
2 vanilla pods
1 tsp whole cloves
Zest of 1 orange, grated
Zest of 1 lemon, grated
750 mL vodka
How do I make it?
Split vanilla pods so that they are open and seeds are exposed.
Add all ingredients to a large jug or bowl and stir to mix. Cover and refrigerate for 3 days.
Line a sieve with muslin and strain the vodka mix into a clean jug.
Pour into sterilised bottles and seal. Store in a cool, dark place.
- Sterilise bottles by heating in a 190C oven for 5 minutes.
- Label bottles with the date it was made and store for up to 6 months.
