Puffy Mini Bites
Ridiculously easy to make, these little bites are ideal fare for parties. They can be made in advance and enjoyed cold or gently warmed in the oven for 5 minutes before serving.

What do I need?
- 1 sheet ready-rolled puff pastry
- 1 tbsp olive oil
- For the toppings
- Olives
- Red onion
- Mushrooms
- Cherry tomatoes
- Basil pesto
- Feta
How do I make it?
- Preheat oven to 200C.
- Using a pastry cutter or knife score pastry into 24 equal-sized squares. Place on a lined baking tray and prick with a fork. Brush lightly with olive oil.
- Arrange toppings of your choice in centre of pastry. We used olives, onion, mushrooms, cherry tomatoes, basil pesto, and feta.
- Bake for 15-20 minutes or until the pastry is golden and puffy.
