
Bunny’s Orange Lamingtons

What do I need?
- 50 g cornflour
- 75 g plain flour
- 50 g self-raising flour
- 6 eggs
- 150 g caster sugar
- 45 g unsalted butter, melted, divided
- 2 tsp vanilla extract
- Zest of ½ orange
- 250 g marmalade
- 60 mL orange juice
- 500 g icing sugar, sifted
- 200 mL milk
- Red liquid food colouring
- Yellow liquid food colouring
- 2 cups desiccated coconut
- Marzipan
How do I make it?
- Preheat oven to 180C.
- Grease and line a 23-centimetre square cake tin.
- Sift cornflour, plain flour and self-raising flour into a bowl.
- Beat eggs with an electric mixer for 10 minutes until thick and double in volume. Slowly add caster sugar, beating constantly between additions so that the sugar dissolves.
- Fold flour mixture into egg mixture, then add 30 g butter, vanilla extract and orange zest and fold through.
- Place mixture into cake tin and bake until a skewer inserted comes out clean, approximately 30 minutes. Remove from oven and set aside to cool completely. When cool, cut cake into 16 equal-sized squares.
- Meanwhile, prepare filling by adding marmalade and orange juice to a bowl and stirring to combine. Refrigerate mixture for 30 minutes.
- Add icing sugar, milk and 15 g melted butter to a saucepan over medium-low heat. Cook, stirring constantly until the mixture is smooth. Transfer to a bowl, then add food colouring mixing red and yellow to achieve your desired shade of orange.
- Add coconut to a bowl along with red and yellow food colouring to make the coconut orange. Toss to ensure all coconut is coloured.
- Cut each square of cake in half horizontally. Spread the marmalade mixture on the cut halves and sandwich back together.
- Dip cake squares into the icing mixture and turn to coat on all sides. Remove from icing, allowing excess icing to run off. Roll cake in coconut, coating all sides. Transfer to a wire rack to set. Repeat with all cake squares.
- Decorate with bunnies and carrots made from marzipan.
