Peanut Butter Cups
Vegan-friendly, these cups combine two of our favourite things, chocolate and peanut butter, to make a treat that everyone will love.

What do I need?
- 1 cup vegan chocolate
- 3 tbsp coconut oil, melted, divided
- ½ cup smooth peanut butter
- ¼ cup maple syrup
How do I make it?
- Line a muffin tin with patty cases.
- Melt chocolate with 1 tbsp of coconut oil in the microwave in 30 second intervals, until the chocolate is melted.
- Spoon some chocolate into the bottom of each patty case and the place in the freezer for 10 minutes, or until the chocolate has set.
- Meanwhile, add peanut butter, maple syrup and remaining coconut oil to a clean bowl and microwave for 20 seconds, or until the mixture is pourable. Stir well.
- Pour peanut butter mixture over the chocolate base and return to the freezer for 10 minutes.
- Pour remaining chocolate over the peanut butter mixture and return to the freezer for 30 minutes or until set.
- Keep peanut butter cups refrigerated for up to 1 week, or in the freezer for up to 2 months.
