Smoked Salmon with Avocado Salsa and Prawns

What do I need?
- 16 cooked prawns, shelled
- 500g smoked salmon
For the avocado salsa
- 3 tomatoes, seeded and finely chopped
- 2 avocados, finely chopped
- 1 red onion, finely chopped
- 1 tsp lemon rind, grated
- 2 tbsp freshly squeezed lemon juice
For the dressing
- ¼ cup olive oil
- 1 tbsp lemon juice
- 1 tbsp chives, finely chopped
How do I make it?
- Combine all dressing ingredients in a jar and shake well to combine.
- Chop all ingredients for the salsa and combine in a bowl. Mix gently, being careful not to crush the avocado.
- Place a heaped spoonful of the salsa on each plate. Top with a slice of smoked salmon and then add another heaped spoonful of salsa. Place another piece of smoked salmon on top of salsa and add two prawns.
- Drizzle with dressing and serve immediately.
