What do I need?
For the Chocolate Bunnies
- 125 g unsalted butter, softened
- 125 g caster sugar
- 2 eggs
- 1 tsp vanilla extract
- 100 g self-raising flour
- 40 g cocoa powder
- 2 tbsp milk
For the Vanilla Loaf
- 175 g unsalted butter, softened
- 175 g caster sugar
- 3 eggs
- 2 tsp vanilla extract
- 125 g self-raising flour
- 2 tbsp milk
For the Frosting
- 150 g unsalted butter
- 300 g icing sugar, sifted
- 1-2 tbsp milk
- ½ tsp vanilla extract
How do I make it?
- Preheat oven to 180C.
- Grease and line a 21-centimetre loaf tin.
- Make the chocolate cake first by creaming butter and sugar until light and fluffy. Add eggs and vanilla and beat well. Fold in flour and cocoa and add milk and mix well. Put cake mixture in the loaf tin and bake for 45 minutes, or until a skewer inserted comes out clean. Remove the cake from the oven and set aside to cool completely. When the cake has cooled, slice it into 6 pieces and use a bunny-shaped cookie cutter to cut out a bunny from each slice. Set aside.
- Wash and dry the loaf tin and then grease and line it ready for the vanilla cake.
- Prepare the vanilla cake by creaming butter and sugar until light and fluffy, then adding eggs, vanilla, flour and milk and mixing to combine.
- Spread one-third of the vanilla batter onto the base and sides of the loaf tin. Arrange the chocolate bunnies upright in the vanilla batter, then add remaining butter ensuring it covers the bunnies.
- Bake for 45 minutes or until a skewer inserted comes out clean. Transfer to a wire rack and leave to cool.
- Make the frosting by beating butter until smooth and creamy, about 5 minutes. Gradually add icing sugar, then vanilla and milk. Spread frosting on top of cake, and decorate as desired.
TOP TIPS
If you’re short on time you can use a bought chocolate cake for the bunnies – this will save you about an hour in preparation and cooking time.
Don’t waste the chocolate cake off-cuts instead you can use them to make cake pops, cake truffles, or layered desserts like trifle.
