Dubai Chocolate

Bite into these chocolate bars to reveal a delectable filling of crispy kataifi pastry, pistachio paste, and tahini. Originally created in Dubai this chocolate creation went viral for the fabulous combination of flavour and texture it offers. What do I need?

  • 60 g unsalted butter
  • 150 g kataifi pastry, chopped and separated
  • 350 g pistachio paste
  • 20 g tahini
  • Pinch of salt
  • 500 g milk or dark chocolate
  • ½ tsp coconut oil
  • 2 chocolate moulds

How do I make it?

  1. Add butter to a large frying pan over medium heat. When butter has melted add kataifi pastry and cook until the pastry is crisp and golden, around 10 minutes. Set aside.
  2. Add pistachio paste, tahini, and salt to a large bowl and mix well. Add kataifi and stir to combine.
  3. Heat chocolate and coconut oil in the microwave in 30 second increments until melted and smooth. Spoon chocolate into the moulds, ensuring that the chocolate coats the base and sides well. Place moulds in the fridge to set.
  4. Spoon pistachio and kataifi mix into the moulds and use the back of a spoon or a spatula to create a flat top. Spoon remaining melted chocolate over the pistachio and kataifi mix and smooth with a spatula. Return to the fridge to set, then remove from moulds.
