Drunken Sparkling Strawberries
You have two choices here; stop after soaking the strawberries and you have a ridiculously easy-to-make dessert or continue to the decorating stage and create a showstopper centrepiece fit for any celebration.

5 minutes, plus overnight to infuse, plus 30 minutes if decorating

What do I need?
- 1 kg strawberries
- 750 mL dry sparkling wine
- ½ cup caster sugar
Decorations - optional
- 200 g White cooking chocolate, melted
- 200 g Dark 70% cooking chocolate, melted
- Edible gold leaf, gold spray, or gold shimmer
How do I make it?
- Wash and hull strawberries and pat dry with paper towel.
- Add strawberries to a large bowl and cover with sparkling wine. Cover and refrigerate for at least 4 hours, or overnight.
- Strain strawberries through a colander, reserving the juices (see our tips) and, if omitting the decorations, sprinkle with sugar and serve.
- Alternatively, pat the strawberries dry and place on skewers. Brush melted chocolate on the strawberries and embellish with edible gold decorations.
- Allow to set before arranging into a bouquet.
