Halloween Platter with Marshmallow Fluff
Trick up this platter of tempting and tasty fruity treats served with homemade Marshmallow Fluff for dipping.

What do I need?
- 2 large apples
- Juice of 1 lemon
- ½ cup smooth peanut butter
- ¼ cup slivered almonds
- 50 g strawberries, sliced
- 2 large bananas
- 50 g dark chocolate, melted
- 1 stalk celery, washed and cut into small lengths
For the Googly Eyes
- ¼ cup icing sugar
- ¼ tbsp cornflour
- ½ tbsp water
- 1-2 drops black gel food colouring
For the Marshmallow Fluff
- 3 egg whites
- 150 g caster sugar
- 50 g golden syrup
- Pinch salt
- ½ tsp vanilla extract
How do I make it?
- Make Googly Eyes one day in advance to allow them time to dry.
- Line a baking tray with baking paper. Set aside.
- Combine icing sugar, cornflour, and water in a small bowl to make a smooth icing. Divide mixture, putting ¼ into a separate bowl. Add black gel food colouring to the ¼ mixture and mix to combine.
- Transfer each mixture into a piping bag or a sandwich bag. If using a sandwich bag, snip the corner off the white mixture and pipe out small eyeball size dots onto the prepared baking tray. Snip corner off black mixture and pipe small black dots on top of the white dots to form the pupils. Set Googly Eyes aside to air dry until hard, then remove from baking sheet and store in an airtight container until needed.
- Make Monster Apples by coring apples, then slicing thickly. Squeeze apples with lemon juice to prevent them from browning. Take two slices and spread thickly on one side with peanut butter. Wedge the slices together, using the peanut butter to stick them together. Decorate with almonds for teeth, and a slice of strawberry for the tongue. Combine a little icing sugar and water together in a small bowl and use to “glue” the Googly Eyes onto the apple.
- To make the Banana Ghosts, peel bananas and slice in half with a zigzag cut. Decorate with melted chocolate.
- Prepare the Mandarin Pumpkins by simply peeling and topping with a piece of celery stalk.
- Pipe or spread peanut butter into celery pieces and top with some Googly Eyes.
- To make the Marshmallow Fluff bring a saucepan of water to a simmer over medium heat. Add all ingredients to a large bowl and set it over the simmering water. Using an electric hand whisk, whip until the mix is thick, approximately 10 minutes. Transfer mixture to a stand mixer and whisk on high speed until it is stiff and forms soft peaks. Serve in a bowl.
