Antipasto Skewers with Creamy Artichoke Dip
These antipasto skewers are literally loaded with flavour and are ridiculously easy to make. Served with a lusciously creamy artichoke dip, they are perfect party fare. The recipe below makes enough dip to serve 8, but you can easily increase the quantity for a larger crowd. Similarly, buy the antipasto ingredients based on the number of guests you are serving.

What do I need?
For the Artichoke Dip
- 300 g cream cheese
- 280 g artichoke hearts, drained and roughly chopped
- Juice of ½ lemon
- ¼ tsp salt
- ¼ tsp white pepper
- ¼ tsp smoked paprika
For the Antipasto Skewers
- Cherry heirloom tomatoes
- Pitted green olives
- Mozzarella balls
- Shaved salami
- Shaved prosciutto
- Cucumber
- Baby spinach leaves
How do I make it?
- Add all dip ingredients to a food processor and process for 2 minutes or until the dip is smooth and creamy. Spoon dip into a serving bowl and refrigerate while you prepare the skewers.
- Thread antipasto ingredients onto skewers and arrange into a circle on a serving plate, leaving room in the centre for the dip.
