What do I need?
300 g plain flour
1 tsp baking powder
½ tsp bicarbonate of soda
½ tsp salt
225 g unsalted butter
200 g caster sugar
Zest of 2 lemons
2 tbsp freshly squeezed lemon juice
2 tsp vanilla extract
3 tsp poppy seeds, divided
How do I make it?
Preheat oven to 180C.
Line 2 baking trays with baking paper.
Combine flour, baking powder, bicarb, and salt in a bowl.

Spoon mixture onto prepared trays – use about 1 ½ tablespoons of mixture for each biscuit, and leave room between biscuits to allow for them to spread during cooking.
Sprinkle tops of biscuits with the reserved poppy seeds and bake for 12 minutes or until golden on the edges.
Allow to cool on baking trays.
