Orange and Cottage Cheese Muffins

What do I need?
- 2 cups plain flour
- 2 tsp baking powder
- Pinch of salt
- ½ tsp ground cinnamon
- 4 tsp caster sugar
- 2 cups cottage cheese
- 4 egg yolks
- 1 tsp marmalade
- 1 tsp olive oil
- 1 tsp vanilla extract
- 1 tsp honey
- 1 tbsp orange juice
- Zest of 1 orange
How do I make it?
- Preheat oven to 180C.
- Grease and line a 6 hole muffin tin.
- Add flour, baking powder, salt, cinnamon, and caster sugar to a bowl and mix to combine.
- In a separate bowl add cottage cheese, egg yolks, marmalade, olive oil, vanilla, honey, orange juice, and a teaspoon of the orange zest and stir well. Fold flour mixture through the cottage cheese mixture to incorporate.
- Spoon batter into muffin tin and bake for 20 – 25 minutes or until a skewer inserted comes out clean. Garnish with orange zest and serve.
