Spiced Rockmelon Loaf
Rockmelon may seem like an unusual ingredient for a cake, but it brings a lovely delicate flavour and moist texture that can’t be beaten. This recipe will make two loaf cakes.

What do I need?
- 400 g wholemeal plain flour
- 2 tsp ground cinnamon
- Pinch of salt
- 1 tsp ground ginger
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 300 g caster sugar
- 3 eggs
- 230 mL vegetable oil
- 2 tsp vanilla extract
- 300 g rockmelon, finely chopped
How do I make it?
- Grease two 24 x 13 x 6.5-centimetre loaf pans.
- Add flour, cinnamon, salt, ginger, baking powder, and bicarb in a medium bowl. Set aside.
- Beat sugar, eggs, vegetable oil, and vanilla extract with an electric mixer until well blended.
- Fold rockmelon into wet ingredients, then add dry ingredients and mix until just combined.
- Divide batter between loaf pans and cook for 1 hour or until a toothpick inserted comes out clean.
- Cool in loaf pans, then turn out onto a rack.
