What do I need?

  • 130g butter
  • 150g 70% dark chocolate
  • 55g cherries, plus extra to serve
  • 55g roasted pecans
  • 225g caster sugar
  • 55g cocoa powder
  • 75g plain flour
  • ¾ tsp baking powder
  • 3 large eggs
  • 50g dark chocolate or milk chocolate, roughly chopped

How do I make it?

  1. Preheat oven to 180C. Grease and line a 20cm square cake tin with baking paper.
  2. Melt the butter and 70% dark chocolate in a bowl over a saucepan of simmering water, without letting the bowl touch the water. Alternatively melt in the microwave on high in 30 second bursts.
  3. Remove the stems and seeds from the cherries, then chop them along with the pecans. Add cherries and pecans to the melted chocolate and butter mixture.
  4. In a separate bowl, add caster sugar, and sifted plain flour, cocoa powder and baking powder. Stir to combine, then pour add to the melted chocolate mixture and stir well.
  5. Beat eggs in a separate bowl, and add to mix.
  6. Add chopped milk or dark chocolate and fold through mixture.
  7. Pour brownie mix into the prepared tin and smooth over with a spatula or spoon until level. Bake for 20 minutes and remove when the outside is crispy, but still slightly soft and moist on the inside.
  8. Remove from oven and allow to cool. When cool cut into 4x4 squares and serve with fresh cherries.
