Dark chocolate cherry brownies
This decadent brownie combines two of our favourite ingredients, chocolate and cherries, into a rich brownie. For an extra indulgence, serve the brownie with a scoop of vanilla ice-cream for dessert.

What do I need?
- 130g butter
- 150g 70% dark chocolate
- 55g cherries, plus extra to serve
- 55g roasted pecans
- 225g caster sugar
- 55g cocoa powder
- 75g plain flour
- ¾ tsp baking powder
- 3 large eggs
- 50g dark chocolate or milk chocolate, roughly chopped
How do I make it?
- Preheat oven to 180C. Grease and line a 20cm square cake tin with baking paper.
- Melt the butter and 70% dark chocolate in a bowl over a saucepan of simmering water, without letting the bowl touch the water. Alternatively melt in the microwave on high in 30 second bursts.
- Remove the stems and seeds from the cherries, then chop them along with the pecans. Add cherries and pecans to the melted chocolate and butter mixture.
- In a separate bowl, add caster sugar, and sifted plain flour, cocoa powder and baking powder. Stir to combine, then pour add to the melted chocolate mixture and stir well.
- Beat eggs in a separate bowl, and add to mix.
- Add chopped milk or dark chocolate and fold through mixture.
- Pour brownie mix into the prepared tin and smooth over with a spatula or spoon until level. Bake for 20 minutes and remove when the outside is crispy, but still slightly soft and moist on the inside.
- Remove from oven and allow to cool. When cool cut into 4x4 squares and serve with fresh cherries.
