Valentine’s Marbled Cookies

What do I need?
- 250 g plain flour
- ½ tsp baking powder
- ¼ tsp salt
- 110 g unsalted butter, softened
- 70 g caster sugar
- 1 egg
- 1 tsp vanilla extract
- For the icing
- 180 g icing sugar
- 1 egg white
- ¾ tsp lemon juice
- Red liquid food colouring
How do I make it?
- Add flour, baking powder and salt to a bowl and stir to combine.
- Using an electric mixer beat butter and sugar on high speed until light and creamy. Add egg and beat until incorporated. Add vanilla extract and flour mixture and fold through to form a dough.
- Remove from bowl, shape into a disc and wrap in clingfilm. Refrigerate for 2 hours.
- Preheat oven to 180C. Line two baking trays with baking paper.
- Roll dough out on a lightly floured surface to a thickness of approximately 4-5 millimetres. Use heart-shaped cookie cutters to cut cookies from the dough. Re-roll to use all the dough.
- Bake for 10 minutes or until lightly golden.
- Remove from oven and set aside to cool completely.
- Make the icing by beating egg white with an electric mixer until foamy. Add icing sugar and mix until combined, then add lemon juice and continue beating until white and glossy.
- Place icing in a bowl and add a few drops of red food colouring. Use a toothpick to swirl food colouring through the icing to make a marbled look. Dip cookies in the icing and then set aside on a wire rack to set.
