One-bowl Blueberry Muffins
A quick and delicious treat for lunch boxes or afternoon tea, and best of all there’s only one bowl to wash up!

What do I need?
- 200 g plain flour
- 150 g caster sugar
- Pinch of salt
- 2 tsp baking powder
- 80 mL vegetable oil
- 1 egg
- 120 mL milk
- 1 tsp vanilla extract
- 250 g blueberries, fresh or frozen
How do I make it?
- Preheat oven to 200C.
- Grease and line 10 muffin cases.
- Whisk flour, sugar, baking powder and salt in a large bowl.
- Add oil, egg, milk and vanilla to the bowl and use a fork to mix. Do not over work the batter. Add blueberries and fold through.
- Spoon mixture into muffin cases and bake for 15 to 20 minutes or until a skewer inserted comes out with crumbs rather than wet batter.
- Cool on a rack, then enjoy.
