Lime and Coconut Cake

What do I need?

  • 250 g self raising flour
  • 50 g desiccated coconut
  • 1 ½ tbsp lime rind, finely grated
  • 250 g caster sugar
  • 150 g unsalted butter, melted
  • 2 eggs
  • 275 mL coconut milk

For the Icing

  • 250 g icing sugar
  • 2 ½ tbsp freshly squeezed lime juice
  • Lime rind, finely grated, to garnish

How do I make it?

  1. Grease and line a 22-centimetre loaf pan.
  2. Add self raising flour, coconut, lime rind and sugar to a large bowl. Whisk butter, eggs, and coconut milk together in a small bowl and then pour into flour mix. Stir well to combine, then pour into prepared loaf pan.
  3. Bake for 45 minutes, or until a skewer inserted comes out clean. Cool in pan.
  4. Meanwhile, prepare icing by adding icing sugar to a bowl. Drizzle in lime juice, a little at a time, and mix until you have the desired consistency. Pour icing over cake, then garnish with grated lime rind.
