Lime and Coconut Cake

What do I need?
- 250 g self raising flour
- 50 g desiccated coconut
- 1 ½ tbsp lime rind, finely grated
- 250 g caster sugar
- 150 g unsalted butter, melted
- 2 eggs
- 275 mL coconut milk
For the Icing
- 250 g icing sugar
- 2 ½ tbsp freshly squeezed lime juice
- Lime rind, finely grated, to garnish
How do I make it?
- Grease and line a 22-centimetre loaf pan.
- Add self raising flour, coconut, lime rind and sugar to a large bowl. Whisk butter, eggs, and coconut milk together in a small bowl and then pour into flour mix. Stir well to combine, then pour into prepared loaf pan.
- Bake for 45 minutes, or until a skewer inserted comes out clean. Cool in pan.
- Meanwhile, prepare icing by adding icing sugar to a bowl. Drizzle in lime juice, a little at a time, and mix until you have the desired consistency. Pour icing over cake, then garnish with grated lime rind.
