Apple Crumble Muffins

What do I need?
For the Muffins
- 120 g unsalted butter, softened
- 100 g brown sugar
- 50 g caster sugar
- 2 eggs
- 120 g Greek yoghurt
- 1 tsp vanilla extract
- 220 g plain flour
- 1 tsp bicarbonate of soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- Pinch of salt
- 60 mL milk
- 2 medium apples, grated
For the Crumble
- 70 g brown sugar
- 20 g caster sugar
- 1 tsp ground cinnamon
- 60 g unsalted butter, melted
- 85 g plain flour
- 30 g walnuts, roughly chopped
How do I make it?
- Preheat oven to 180C.
- Grease and line a 12-hole muffin pan with muffin cases.
- Make muffins by beating butter, brown sugar, and caster sugar together with an electric mixer until creamy. Add eggs, yoghurt, and vanilla and beat for 2 minutes. Pour in flour, bicarb, baking powder, cinnamon and salt and mix on low speed. Drizzle in milk and beat to combine. Fold in grated apple.
- Pour into muffin pan. Set aside.
- Make crumble by mixing all crumble ingredients together in a bowl.
- Spoon crumble over the muffin, then bake for 15 to 20 minutes, or until cooked through and golden.
- Cool in pan for 10 minutes, then transfer to a cooling rack.
