Zucchini and Feta Muffins
These muffins are quick and easy to make, and they taste delicious. They can be frozen too, so you can make a big batch and store in the freezer.

What do I need?
- 300 g plain flour
- 4 tsp baking powder
- Pinch of salt
- Pinch of freshly ground black pepper
- 100 g grated cheddar
- 100 g feta, roughly chopped
- 250 g grated zucchini
- ½ brown onion, finely diced
- 240 g milk
- 2 eggs
How do I make it?
- Preheat oven to 220C.
- Grease a muffin pan.
- Add flour, baking powder, salt and pepper to a large bowl and mix to combine. Add cheeses and stir.
- In a separate bowl add zucchini, onion, milk, and eggs and mix well.
- Pour wet ingredients into dry ingredients and mix until just combined – don’t overmix.
- Place mixture into muffin pan and cook for 15 minutes or until the muffins spring back when poked with your finger.
- Remove from oven and allow to cool before storing in an airtight container.
